UMINHO Team
The UM-CEB team is integrated into two Thematic Lines of Biotechnology and Bioengineering, Industrial and Food. By adopting a biotechnology-driven approach, the team combines technological innovation and bioprocess engineering to contribute to more sustainable and efficient food systems.
Associate Professor at Uminho, PhD in Chemical and Biological Engineering, with recognize expertise in mycology and in the evaluation and management of contamination by filamentous fungi and their metabolites (e.g., mycotoxins) in the food system. Within the FRUTotal project, he participates in the fruit bioprocessing activity ensuring the safety of fermented products.
Armando Venâncio

Assistant Researcher, PhD in Chemical and Biological Engineering, with consolidated experience in yeast cultures, bioreactor operation, and by-products valorization. In the FRUTotal project, she ensures the definition of experimental conditions and the selection of yeast strains to achieve optimal performance during bioprocess development.

Assistant Professor at the University of Minho (UMinho), PhD in Chemical and Biological Engineering, with recognize experience in bioprocess engineering focused on the valorization of agro-food byproducts through fermentation approaches, particularly by solid-state fermentation. Within the FruTotal project, Isabel Belo is the project responsible at UMinho supervising the activity of fruit bioprocessing, being actively involved in all stages of the process to ensure scalability and the quality of the fermented product.

In the FruTotal project, she is responsible for carrying out the experimental research activities, collaborating with all members of the team to ensure effective implementation of the planned work.

PhD student in Chemical and Biological Engineering, with experience in agro-food byproducts valorization. In the FruTotal project, she participates in practical execution and optimization of solid-state fermentation bioprocesses and fermented substrate characterization.
