The IPVC team represents a strong example of collaboration between academia and industry, combining technical knowledge, creativity, and practical problem-solving to address real challenges in the food and beverage sector, promoting innovation, efficiency, and sustainability.
Adjunct Professor and Researcher, PhD in Chemical and Biological Engineering, with recognized experience in the development and innovation of food products. Within the FRUTotal project, she is responsible for the formulation and physical characterization of pulp preparations, contributing with specialized knowledge in functional products, as well as in physicochemical and sensory analysis, integrating principles of sustainability, resource efficiency and food valorization.
Rita Pinheiro

Adjunct Professor and Researcher, PhD in Nutritional Biochemistry, with extensive experience in microbiology and food safety. In the FRUTotal project, she is responsible for the microbiological evaluation of fruit biomass and preparations. She ensures compliance with food safety, hygiene and quality requirements.

PhD researcher in Chemical and Biological Engineering, with experience in biotechnology, sustainability and valorization of agri-food by-products. In the FRUTotal project, she is responsible for the practical execution of research activities, working closely with the entire team.

Professor Coordinator at IPVC and Director of CISAS, she is a researcher with extensive experience in national and international projects in the field of food science and engineering. She leads the FRUTotal project, ensuring overall scientific coordination and the formulation and monitoring of pulp preparations. Her activity focuses on food innovation and the sustainable valorization of surplus and by-products of agri-food products.
Manuela Vaz Velho

Coordinating Professor and Researcher, PhD in Organic Chemistry, with consolidated experience in food and analytical chemistry. In the FRUTotal project, she leads the fiber extraction methodologies and the chemical characterization of the raw material and concentrates and preparations. She ensures the scientific quality and analytical validation of the results obtained.
Preciosa Pires
Investigadora / Extração de Fibra e Caracterização Química
Assistant Professor of Civil Engineering, with a PhD in the field and experience in applied research on sustainability. In the FRUTotal project, she ensures the Life Cycle Analysis of the developed solutions. She contributes to the evaluation of environmental performance and to the integration of the principles of the circular economy.
